Ultimately, it really boils down to this. OP wanted simple, that is simple. Avoid processed food and you are good to go.

Peak is complex carbs. Not fibrous carbs, but complex carbs. Potatoes, rootfruit, wheat ie porridge (not pasta), etc

Low pufa and complex carbs to go, and you're peak healthy.

It's basically high carb low fat, especially PUFAs. To expand on said, the carbs can come from anywhere but the fats should be as saturated as possible, with EVOO in moderation if you like them. So that leaves us with ruminants, dairies, lean seafoods, lean chicken, and lean pork as your source of proteins. It's also probably good to not overdo the veggies due to their antithyroid effects

Does the thing you're about to stuff your gullet with grow somewhere or it used to move around at some point? How many steps does it take to directly translate back to that stage? The fewer the better and ideally just 1.

A healthy diet is one which is comprised of only things naturally found in nature which undergo minimal refinement which you could also produce and harvest on your own such as but not limited to root vegetables, fruit, beans, poultry, eggs, and other animal product.

All you have to do is keep the fats low
The fat you eat is the fat you wear
    carbs make you thin
fat makes you fat, hence the name

    Carbs:
Sweet potatoes and other vegetable starches eaten with the skin
    Fats:
Pumpkin seeds, or any monosaturated fat, with a decent amount of omega-3s potentially some eggs if you're lower body fat.
    Protein:
Fatty fish, chicken, leaner dairy, rumiants.
    Assorted micros:
Leafy greens, kiwis, berries, bell peppers, broccoli brussle sprouts just about any produce can go here assuming you're square on the carbs, fat and protein sources. Unfortunately this category is also the most expensive relative to calories so just eat what you can seasonally.

    >Consume less than 150g of carbs a day.
    >Do not use seed oils, tallow/lard/butter/avocado oil are all better alternatives (olive oil is also fine but it's not for high temp applications).
    >Never eat fast food and avoid anything with HFCS, GMO, or otherwise has a mile of ingredients that are hard to pronounce.
    >Learn to cook at home and try setting up your fridge so everything needs to be cooked beforehand.
