Not OP, but I used to cook really well and briefly went to culinary school. Then I decided that I want to make my dishes for myself simpler, so now I focus on perfect temperature and timing of things and I basically only season with salt and usually not much else. Saves a lot of work on dishes too.

Depends on if you're doing it in a pot vs. cooker. In a pot I do 2 to 1. In a cooker I just do up to my first knuckle. Honestly rice is so easy and foolproof that it's hard to frick up and not come out fluffy. Another reason to just make your own.

I was eating things like this in a recent push to lose weight, but I was recently diagnosed with Type 2 Diabetes, so the rice might be a no-go for me, so i'm figuring out what I can and can't eat. I have to establish a base line and then find out how much brown rice will spike me.
That's how chicken works. Use the drippings to make gravy or roast the chicken on a bed of potatoes that will soak up the fat. Also don't cover it. If you try a lower temperature for longer you can keep the chicken moist but it will also come off the bone more easily, which will allow you to pull it or chop it up (mixing dark meat and skin in with the white meat will spread some of that flavor out).
even if you marinate for days, seasoning doesn't penetrate more than like an inch or so into the meat if memory serves. You're gonna need a smaller cut like wings, breasts, etc. if you want the flavor to penetrate all the meat
