Carny is so much more painful than any other method of weight loss. I've stayed on a sub-1000kcal CICO diet fairly effortlessly for almost 6 months. I've tried carnivore 3-4 times and each time I break after a week. I desperately want to try carnivore for a significant length of time but it's so difficult to stay on. I totally buy the health benefits but why do people say it's "easier" than other dieting, it's the most mindnumbingly repetitive diet ever and it forces you to confront every food addiction you may have rather than just cutting back on foods you like as in CICO. How is breaking a bunch of addictions easier than eating less?

For me, I had a lot of issues with food addiction. Sugar devil on my back, using food as comfort, etc. Once I got used to it (took about a month) then I had zero cravings, and I found that all I wanted was to eat meat.
I felt really good and really confident about the diet. Something about it just made me feel right.
I've done a lot of nutrition "research" in my spare time and I came to the conclusion that plants aren't necessary or even healthy.
And it is plain as day for me if I eat some sugar or something sweet "in moderation" that it quickly turns into my addiction again.
That's just me. Its much easier to quit all of it than to "have self control". Self control is for morons. Make a decision to change your life instead of torture yourself with "oh this food is bad but I can have a little bit!"

Right now I more or less do 5/3/1 BBB 4 days a week and walk about an hour every day, 5k once a week.

It's more like your body has an operating range. Anything from 1500 to 2500 and you'll stay the same. Anything less than that and you lose weight. Anything more, you gain. As for the range itself, your body might only need 2100-2200 caloies in a day, but it burns the full 2500 and radiates the rest away as heat if they're not spent. Meanwhile down at 1600 you won't lose weight, you'll just feel cold and tired because your body will "underclock" your organs to save calories and it's not until you go really low it will break into fat reserves.

Your body utilizes food through lots of chemical processes that are very complicated and it can vary based on you and what you eat specifically.
CICO is a scam. Its actually just impossible to know exactly how much of the "calories" you're putting into your mouth are used for energy and what is stored. You'll only know by looking in the mirror.
The scale isn't even an appropriate measurement because body weight can fluctuate a lot based on how much water you're holding onto.

Those "experts" are assuming your TDEE is 2500 calories or some shit. I'm a manlet like you and my TDEE is only 1800 calories, so a standard diet defecit of 500 calories brings me to 1300 calories a day, not far off 1200. It sucks that our TDEE isn't that high to begin with, 1200 calories is such a small amount of food. But I've found that OMAD works better for curbing my hunger than trying to split 1200calories over three meals and feeling full., but your experiences may vary.

You may need to increase protein in your diet, add some activity, and eat mostly nutrient dense foods with little to no filler.
The main thing is activity. A person of your height should maintain around 2000 calories, so you should probably be eating protein and hitting the gym to get swole. A resting metabolic rate of 1700 calories a day indicates either low activity, or an underdeveloped physique.
