Binge eating carbs within a 500cal surplus not only gives you energy to lift heavier but also makes your muscles more full looking. For size, you need carbs and protein. For definition on the other hand you want to limit carbs like you limit fats : only what is necessary.
Also do more trap exercises, you like wide but your mid and upper back is lacking
