As with all proper exercises, you need rest days, and if you're just starting out, you will be sore, or should be if you're training properly. It also depends on your program, what your goals are, and where you can fit the ab exercises, but all in all, say, doing abs twice a week should be good.
Crunches are suboptimal but you can still include them in your ab workouts. Look into planks with knee tucks, hollow body holds (if you can't hold your hands over your head at first or feel like you aren't training it optimally, try the hollow body with your arms at the sides of your torso, you should feel it in your core straight away) and leg lifts.
Anyone that says working core isn't necessary is a DYEL poser, even for fat powerlifters having a trained core does wonders for their strength and stability. Godspeed.

Yes. But you don't have to. You really only need about 6-9 sets of 8-15 reps in total of situps/weighted situps or hanging leg raises per week as a beginner and maybe only for a year. Then later you only need to add about 6 sets of an ab extension exercise after a year or so.
