It cooks from all sides evenly, reduces moisture loss, gets a crust on all the edges, doesn't overheat so there is no charred or burnt parts. If you barbecue you have to brush on fat for good results. If you pan fry you have to use tongs to fry all the edges or constantly spoon butter over the top.
I like to dry my steak in front of a fan before I deep fry it to make sure the fat touches the proteins for a perfect crust.
