I think I'm finally ready to leave processed and fast food behind. But where do I start? What's the best and cheapest way to have a healthy diet? What do you recommend?
I've been conditioned my whole life to just buy junk, I don't really understand anything else. Give me the raw rundown. Just want to be healthier, don't really care about gains as much.

Chicken has a tendency to dry if you cook it wrong. Thighs are the simplest to make since they’re more juicy than breast. Also cheaper.

Invest in a roasting dish with a lid and cover it for the first half of the cooking process and it won't get dry. Roasts are actually surprisingly easy to cook and will feed you for a few days. This is roast piggu I cooked the other week and I made soup with some of the leftovers.

OP : Obviously Rice + Beans + Chicken + Eggs.
A rice cooker would be a great $20-30 investment to make. As easy as putting the rice in (rinse it) and put in 2:1 ratio water to rice, and push the button, then boom, you have rice.
Beans are also super easy. Soak overnight in pot. Add more water, and slow cook them w seasoning, chicken broth, salt, until they're soft.
Chicken can also be super easy.. you can just toss it in the oven and bake w minimal seasoning ( salt/pepper/garlic & onion powder is good ).
Chicken thighs are your best bet, boneless preferably for ease of cooking and because it's got some fat to it.
Assuming you're in the first world, I'd advise getting a costco membership. It literally pays for itself w built in cash back @ end of the year. They've got 40lb boxes of chicken, HALAL even, for like... $50. I love Jasmine rice, has a great smell when it's cooking.
Anyhow, a pot of rice could cover you for a few days worth of meals, and you can easily cook a big pan full of chicken for the same time span and the average cost per meal will be very low.

first of all: most people still like processed and combined food. it would be smart to write down recipes and knowledge about certain foods. i recommend to eat these foods if you whant to eat healthy (remember that gaining muscle is a sign of healthy eating): mullberries( a lot of vitamins, idel for homesteading), potatoes (grow easily), sauerkraut (processed and conserved but good against scorbut), mushrooms (good for brain, fiber), all sorts of berries, greens (you can actually eat a lot of them. grass, even leafs but you have to know there effects), fruits( very natural and healthy, against scorbut, fibre), carrots/roots (very old natural food), water (no drinks, no alcohol, be aware of deadly poisons and microbes. also do: squatting (healthy for both men and women), sprinting (main activator for human groth hormone), sleeping with out blankets (cold air will activate your bloodcells.
Find just 1 or 2 good recipes that you like off youtube to cook along exactly and remember. Cook them until you feel like the recipe becomes somewhat of your instinct. And then move on to other recipe and repeat.
When I started I made a simple mushroom pasta dish from jamie oliver youtube and it took me an hour, gradually I down it to like 20 mins now

Start one day and one meal at a time. Say "on Friday I am going to cook steak and potatoes and that will be what I eat that day." Then after you get good at that, branch out. Make Thursday chicken and rice day. Make Wednesday pasta and meatballs day. Eventually over the course of several months, you'll build up a list of recipes you can actually cook and that are healthy. Once you have enough you don't "feel like you're always eating the same thing" just start rotating them as you see fit. The big thing, though, is always grocery shop on the same day and always plan out your week. It's easy to fall into the goyslop trap of "I don't have the ingredients to make a meal for tonight, I guess I'll just go buy one."

Rice will fill out most of your meals. Then just buy some meat a veggies and roast them to go with the rice. You can easily feed your self for a week and only cook twice a week if you just make large batches of rice and roasts then reheat them when you are hungry. Just look up videos of peoples meal preps. It makes it a whole lot easier to switch from processed food when your new food is just as convenient.

If you have no time then boiled potatoes and milk is nutritionally complete. I mean, it's not great, and you could probably make mash potatoes if you got more time, but it is the easiest and very easy to calorie count.

This is a great start, here are some other things you can add/swap for carbs & veggies.
Potatoes are in many ways better than rice as a carb source, and you can make them in a million ways.
Tomatos, onions, bell peppers, spinach, green beans, and mushrooms are awesome even just sauted. Mushrooms in particular are a staple for me. You can also add them to your eggs in the morning.
Most important advice I can give you though is don't be too strict too fast, you'll burn yourself out. Cooking all the time can get old (you'll have to learn to meal prep). It's fine to transition into eating healthier over time, I actually found that it's impossible to go back to goyslop now, I can't even stomach it. There's also plenty of ways to have a varied diet even with more name brand stuff, just look for lower sugar, lower carb, lower fat, etc options. It is a good idea to at least track your macros (fat, protein, carbs) and make sure you're in a reasonable range for gains. good luck bro, eating clean was one of the best things I've ever done for myself.

Here is another good one for sesame ginger salad.
Combine sesame oil and rice wine vinegar in 2:1 ratio. Mix with minced garlic and ginger. Add onions sauce and small bit of Siracusa or chili paste.
I highly recommend plain carrot salad with either of these dressings for a snack. Grate carrots and add one of these dressings. Simple as.
