i've been at it for a while, and yes, i do essentially follow your train of thought by keeping organs like liver or spleen a "once every few days" kinda deal, while the rest is muscle, or [organ but is actually muscle ex. heart/tongue]
If you're eating red fatty meat coming from ruminant animals, then actually you are. People before around 10k years ago ate red fatty meat. And that's pretty much it. Throw in a brain and some bone marrow in there for good measure, and yes, you are eating an ancestral diet.
Just be careful about organs. They're fine once in a while, but there's more and more reports of them causing problems in excess.
