I buy the farmed salmon from trader joes. Shine it with a high powered flashlight to see if there are any parasites. Then I sear it for a few seconds on each side with olive oil, cut it and eat raw.

TJs has a salmon rub that's pretty good but it has brown sugar in it. I usually do so.y sauce in the air fryer.

Salt + 1kg salmon + oven. That is all.

Wait, does this shit work? I always just ate it. Do you shine in the store?

No, I shine it at home after buying it. Farmed salmon is pretty unlikely to have parasites anyways, I've never seen em.

      >raw
Sushi rice done right is as hard as excellent fried rice. But easy to do well, salmon needs the pickled ginger tbh if I'm cooking at home I use tuna unless I'm searing. Even then tuna is sicker but salmon is definitely something I go for if I have all the shit for it, not as easy.

I just add salt and cook it on the stove for 2 min per side in tallow and ghee. Then I add butter and enjoy.

Good salmon doesn't need a fancy recipe or spices. It should be a nice, natural dark pink/reddish color. Buy wild-caught salmon.

i got a good deal on wild caught recently but didn't feel like freezing it so i just salt cured it.
but now when i use it it's very very salty almost to an uncomfortable degree.

I’ve eaten plenty of wild caught salmon, but hell maybe I’m eating the wrong ones, cause I found farmed salmon to be the rattiest and tastiest. I’m chewing for ages on the wild stuff because it’s been using its muscles swimming out there

Sesame oil rub the shit, pepper salt pepper, more sesame oil then black sesame seeds, sear at like 425 450 in a lot of canola after letting rest for nearly an hour, slice not too thin.

Use 1 to 1 or less white rice to water after washing gotta eyeball it, add a lil tiny tiny bit of sesame oil before cooking, use the next day for fririce.
    >metal spoon wok or searing pan
    >oil, rice, evenly oil a lil more
    >thinly diced onions soon get the timing down
    >open up the middle, garlic then scrambled egg, cook till dry use more egg than you think
    >mix the egg in, you already seared the chicken shrimp or whatever and set it aside, add that and the peas
    >garlic powder
    >mix some butter and flip and stir use a small amount by french standards and kinda burn it on so don't plate it right after adding
Mayo Sriracha added to the fririce is also just better. I am lazy so I usually just sear then onions then plate with white rice Sriracha mayo for anything asian, ginger onion onions sesame oil sauce with beef stock/deglaze to serve for steak.
