I was never like this before i started lifting
I goto the gym nearly everyday. I basically run PPL year round.
Lifting weights causes me to need junk food in order to actually not feel like shit.
Ive always eaten healthy, but its like I require endless junk food to feel energetic while lifting weights everyday
for me its the exact opposite
fixed diet, bloating gone, getting leaner while still eating a decent amount of food, energy levels seem to be on point no lows, random weekly headaches gone.
Eat decent food, snack of some tasty shit but not too much and it seems to work pretty well.

I had endless random aches and pains back during college when I ate like shit and weighed 350, then grew a pair after graduating and started learning to cook and eat properly
I'm still objectively kind of fat but it's just a matter of time until I'm not fat at all and the quality of life difference is astonishing.

yeah your body probably needs to adjust, my advice start fasting first and slowly introduce healthy food, fasting will make you feel energetic and not tired all the time, well at least it did for me, everyone is different and you just gotta keep trying different things until you find something that works for you

Put them in cronometer or myfitnesspal and see whats missing. Processed shit might be bad for their bullshit additives but they do add some vitamins and minerals into it, though their bioavailability might be arguable but its more than 0 when compared to your "healthy food".
You are probably eating insufficient carbs on the whole food diet.
Try more spuds, bread, rice, honey, sugar, oats.
What if you substituted the processed, unhealthy carbs for a bowl of oats with fruits and/or a little bit of jam instead?
