You won't lose muscle as long as you lift, you will lose strength which will mentally frick you over.
Muscle memory isn't magic, the energy has to come from somewhere. Calories in, calories out and all that.
When gaining, you should keep it low fat, eat the TDEE of your goal weight and make sure you eat (goal weight in kilogram*2) grams of protein every single day (yes, also on resr days)
Alternatively just eat 400-500kcal under your current TDEE and eat twice your current weight in grams of protein to become leaner by keeping most of the muscles. In total effort, that's the easier way.

Muscle memory is literally synapse formation in the brain that ensures the nerves used in an individual muscle have a stronger connection. Which equates to better reflexes when using said muscle.
It has nothing to do with muscle mass and you can develop muscle memory by simply going through the motions of an activity.

How long to reverse metabolic adaptions of fasting?
I want to do a 5 day fast, 2 day refeed, then jump into a PSMF for cutting. Adherence aside, is that protocol enough to ensure I don't pre-frick my TDEE? Or should I do maybe a 7 day fast, 7 day maintenance, and then start a PSMF?
my overall goal (health reasons aside) is to shrink my stomach, reset my hunger pangs/feeding times, and reduce my cravings to certain foods so PSMF is easier.
You don't shrink your stomach, you become more sensitive to leptin secretion. But even then your desired goals are stupid. Either fast or do keto if you can't be arsed to simply eat less. PSMF is a horrible diet if you're doing it for more than 2 weeks.
I just remember the last time I fasted it was pretty hard to eat a LOT of food. As well as reduced hunger and 0 cravings.
I'm not necessarily doing PSMF, but I am just eating for rapid fat loss (fat mass * 30) and psmf is close enough to the alotted maximum. I'm not going to be strict about it at all, it's just thats my maximum minimum. If I can't do it I'll simply add more cals, I've done it before, I know what I am getting into it, not to fun.

If you fast for weeks maybe. This comes from people equating lean mass with muscle. In reality the "muscle loss" 99.9% of cases is just intracellular water and glycogen loss that is restored when you start eating a similar amount of carbs again. So yeah you'll gain the "muscle" back quickly because that "muscle" you lost wasn't actually muscle.
