              eating like a "normal person" is what keeps insulin elevated which is the precise reason why the body will only slowly shed the weight. there are two options: eat carbs and even at a caloric deficit your weighloss will be low. not only that your basal metabolic rate goes down due to the body actually breaking down muscle. now you are stuck and will yoyo the moment youll stop your dieting. the other option is to keep insuling low by eating once a day and staying away from carbs. at this point the body will predominantly lose body fat and spare muscle mass. not only that the basal metabolic rate goes up. the body massively breaks down fat and additional you breathe out/piss out ketones. metabolic rate goes up by an amount that is roughly 600 kcals/day. no muscle loss at all. eating "like a normal human being" is what made OP fat and metaboliocally sick to begin with.
