        Mostly this. The main issue with deep frying is the amount of fat it adds. Super calorically dense and we know what happens when you high carb with high fat. That's why baked potato chips have half the calories of fried.

        High smoke point fats are also inflamatory.

    It really is the oil. If it's easily contaminated, like most seed oils, or has a low smoke point, like butter or olive oil, then it fricks the body up. That's where all the health issues are with fried food

    Depends mostly on the food and the larger context of your diet. Most Chinese people cook meat through a technique called passing through oil which is basically shallow frying. They're pretty set on longevity and use the shittiest oils and metals imaginable. Genetics are pretty much ultimate risk factor and this minutia about preparation and shit is maybe shifting your odds maybe 3% in one direction or the other.

      I cool a lot of traditional Chinese dishes and always wonder how they stay so thin when so much food involves oil. I understand many parts of the country actually have high-quality ingredients and eat less preservatives, but still.

          You can and should cook with some oil
          A few grams of oil won't kill you and makes cooking much easier and tastier.
          You're just going to be eating burnt dry food if you use no oil.
          Your other option is to cut and then cook fat off meats and use that as your oil (lard) to cook your meat, which is a valid way of doing it.

          Fats in general are not bad for you. And a little bit of saturated fat won't kill you. Deep fried anything is where your biggest concern is.

      The reason is due to the extraction process
      They use a lot more chemicals and refinement to get canola oil
      Olive oil, especially extra virgin olive oil is simply pressed olives
