Why are IST conspiracy theorists all of a sudden against eating grains?

    A big problem with seeds (which grains are) is phytate, which hurts the absorption of some minerals, mainly zinc. This can be mitigated if you process them correctly but unless you know your mineral status is optimal despite consuming lots of phytate, you should moderate seeds and have at the very least one zinc-rich, phytate-free meal every day.

    If you tolerate them, grains can be an excellent or great source of some nutrients like carbohydrate (obviously), thiamin and iron.

        Forgot to mention I'm only talking about whole grains. Phytate is not an issue with refined grains.

        Yes, the RDAs and DRIs are not optimal but diet should be optimized as best as possible before considering supplementation since food is superior for several reasons. Supplements should supplement a diet, not become the foundation.

        Pretty easy to find in PubMed trials which consistently show how in humans phytate in a meal reduces the absorption of minerals and articles that relate how populations whose diets are low in bioavailable zinc and high in phytate have an increased prevalence of zinc deficiency. Dismissing evidence just because it's not of the best possible quality is quite silly but that's subjective. You should look at the whole of the evidence and then form your conclusions.

                If you READ what I presented you'd know the reason those populations are zinc deficient is because of phytate PLUS not getting enough zinc. You're fixating on epidemiological evidence while HUMAN epidemiological, mechanistic and experimental evidence all show meals that contain foods with phytate will reduce the absorption of minerals, particularly zinc. This does not mean you *can't* eat a high phytate diet and have optimal mineral status but it does mean you have to be more careful with your diet.

    Is quinoa as good as it's made out to be? Quinoa with nuts and natto is one of my standard breakfasts (the others are grain-free).

      quinoa is technically not a grain. all the other psuedocereals have lots of high mineral content not found in true grains. they're good but I prefer wheat, oats, barley etc.
