Possibly not a very good idea, beef liver has too much copper. In excessive amounts it can interfere with the absorption of other minerals IIRC
other way around. zinc negatively affects the intestinal absorption of copper.
like with iron, excess copper accumulation can cause oxidative stress though.
It's the vitamin A in liver that will frick you up if you eat too much of it. It's because vitamin A gets stored in fat and isn't easily eliminated by your kidneys, so it can up to toxic levels and become a persistent problem.
Liver is extremely nutritious but like most things must be eaten in moderation and balanced with other things.

First fry it with a lot of leek, then puree that with raw garlic, ginger, and grated raw carrot. Then bake it into pate, cut into individual portions and freeze.

Chop everything up, throw it in a skillet with some butter or tallow or olive oil. Liver first, then the onions, once they get translucent the apples, once the apples get soft - the garlic. Add whatever herbs you enjoy, salt and pepper to taste, maybe some chili flakes if you like it spicy. Enjoy over some white rice or on its own.
Tip: Pick a more tart kind of apple rather than the super sweet ones.
