Cables are for all intents and purposes the same as free weights. It's just that the direction of force changes from the ground to the pulley. You've still got freedom of movement.
And your premise isn't even true. Lots of machines kick ass.

Leg curls compared to ????
Hack squats compared to squats if your femurs are long (for quad growth)
Reverse pec deck compared to bent over dumbbell raises
Lateral raise machine compared to dumbbell lateral raises

Lateral raises are a good one to look at to see how cables are helpful for these things over free weights.
Depends on the exercise ofc but if you want to compare something like skullcrushers for tricep work with tricep push downs or kickbacks on the cable machine, the uniform resistance that comes with cables and machines means the muscle is experiencing constant resistance, as opposed to high resistance at the bottom of the skullcrusher that goes down to zero as your arms get perpendicular to the floor. Staying under constant tension = better lift, having maximum tension when the muscle is in a deep stretch = better lift.

Cable machines.
Outside of a handful, I find that most machines just depend on your own body. For some they work, for others they don't and some are just universally shit. If a machine doesn't work for you, don't use it.
Peck deck, assisted pull ups, there was one pull up machine at my previous gym that blasted my back better than anything ever. Anything with cables is good. Bicep and tricep machines usually good.
For me its:

>Hamstring curl
