I base my diet around this because I'm poor as shit and don't want a diverse diet. I don't like to eat a lot so I prefer a few cups of one thing with what I need. Amaranth and turnip greens are especially good super foods. Turnip greens contain close to all vitamins you can get from plants in just 2 cups. Amaranth leaves contain all your potassium needs in 2 cups. Amaranth grains contain all plant proteins and high iron.
