I would say spices are probably the number one thing to making cooking the same veggies unique in flavor. A couple simple rules.
>intensify flavor? Add sautéed garlic
>subdue flavor? Add sautéed onion
>too acidic? Add sweetness
>too salty? Add fat
Etc.
Beyond that you learn over time what flavors unlock in different veggies and how to cook them. For example.
>zucchini tastes like shit but if it hits a certain temp and browns it becomes wonderful
>carrots baked slow have a unique taste
>rapini and other greens over cooked become bitter
>oils can often kill flavor but temptation to use oil because poor cooking skill is common
>people cook way too high heat and too quickly often

Yeah. Onions especially is just as good as animal protein. Only thing I would watch is the shakes and make sure they're good quality, I use Huel protein which has more EAA's than whey and also has lots of vitamins and minerals.
