Alcoholism can take ages to fix. There's no concrete timeline but usually it's 7-21 ish days for the immediate, sudden miserable side effects to pass you by where you'll be able to hopefully sleep and not worry about constant night terrors or carb cravings.
Other than that, get some electrolytes, exercise, go for walks and get some clean air, make sure you're supplementing vitamin B & Magnesium early on and get in the headspace where you're not going to drink again.
Was that quitting cold turkey or did you ween off for a bit? I'm sitting at about 2 drinks a day after almost a year of 7-8 daily and I haven't noticed anything besides headaches and grumpiness.
I still drink from time to time but when I got off my daily drinking that I'd been doing for years: I weaned off and cut back before stopping. I also took a bunch of supplements and did it under supervision of my GP who did blood tests in that time. I've had periods of up to 3 years of total sobriety.

Depends on the severity of alcoholism, you've got alcoholics who eat and "function" and you've got skinbags massively deficient who mostly just drink and both camps can be deficient.
If you've been weaning yourself off, good. Stay healthy but look out for some of the other signs too beyond headaches or grumpiness. Rapid heartrate, anxiety, low blood pressure, muscle weakness, spasms, nerve pain, hyperthermia, intense sweating, cognitive issues (confusion).
Worst case scenarios for alcohol withdrawal are associated with wet brain leading to a stroke, coma or death. Thiamine deficiency and the like so it's always worth seeing a GP if you've cut out daily drinking and getting blood/urine tests etc.
Try not to use that as a reason to not stop if you're NA or something, the cognitive side effects from not drinking can be worth it alone. There's also the bonus of not poisoning yourself and drinking sugar.

Alcohol is a suppressant and in order to compensate for that your body will tune up the essential mechanisms that are being suppressed - including physical and mental systems. When you suddenly take away the suppressant they are free to run amok in that excited state (which can manifest as fast heart rate, lack of sleep, irritability, headache, sweating, etc) until the brain readjusts to a state without alcohol. If your symptoms are severe contact a medical professional because acute withdrawal could be fatal if you were chugging 10 cans a day for years. This is true for basically anything that has some degree of exciting/suppressing effect, and is all a regular part of homeostasis. Many "disorders" and withdrawals are essentially the same hand-wavy explanation in that your homeostatic capacity has been overwhelmed.
