anything that feels more bony (like the spine and the head) I cook for a long time because it then becomes crunchy
the tail in particular is my favourite part because of how it just cracks into bits when I bite into it

Sardine bones are nothing you barely even notice them and they're a good source of calcium, but that said most of them are sold without bones and the tin will usually say boneless.
I've never seen sardines with the heads and tail sold at a regular grocery store where I live. They're all headless and tailless.

Whenever I have deenz for breakfast, I first drain the oil/water and then add a bit of salt and lemon and proceed to eat them with whole wheat bread slices. It is not the perfect way of consuming them if flavor is very important for you, but it's tasty enough and very quick and simple.
