I work with kids and can tell you how real this is. I also get most of the "Anime kids" because I can get them to relax somewhat around me and befreind them. We get a lot of teens with anxiety but anime anxiety is another level of moronic.
Normally, you have a kid open up and they make basic level social mistakes like oversharing, cursing, or some kind of inappropriate touching right? Normal stuff a human aged 12-17 would do, just an awkward kid.
Anime kids open up and do overexaggerated movements, unironic jumps for joy, make weird jokes like they have a laugh track following them, and expect you to love them because they show the base level of "Being nice" to you. Its fricking terrible and they end up getting bullied and run back to you or their friends like its the bullies fault for misundertanding them. It's like they can't differentiate fantasy from real life. Anime makes them into nice guy/girls because the storyline is cookie cutter shit. "Oh look, this guy is just like me" Yeah no duh dipshit. They describe him/her as a highschooler and all his/her romance options as super models and D1 Athletes. Of course you can put yourself in their shoes.
And you're spot on about the violence. They almost always get into fights with their bullies or some dumb shit like that. This is true. It was probably prevalent at that time with Invader Zim adults but now its easier for thousands of people like that to get together and ramp each other up, like you said with them growing up with a bad idea on how to act.

Anime is popular and a lot of characters are over the top sure, not I think any one of them consuming a lot of media with similarly exaggerated personalities will end up much the same.
