People think that once you cook or pasteurize something, all bacteria inside it (and on the surface) are permanently destroyed and nothing else will grow there; not so. New microorganisms that feed on the carcasses of the old ones will flourish. We also know that 'good' bacteria exist, and our guts are an ecosystem of microorganisms that have to exist in a certain balance for us to be healthy. We've known about this for years. We even have natural E. Coli and salmonella strains that presumably play some biological function. Nature has crafted us over millions of years of natural selection, and it will always be wiser than us.
