Olive oil is awesome. First of all, it isn't a seed oil and isn't ultra processed like seed oils. Secondly, it contain healthy fats that our body knows how to utilize. Last, but not least, it contains lots of antioxidants and other chemicals that protect your cardiovascular system.
The issue is that like 80% of ia fake or mixed with seed oils. It's easy to test if it's real just by taking a spoon of it ibto your mouth. It will be bittery and will make you cough.

olive oil is better because the refining process isn't as intense so some antioxidants can make it through
butter is is harder to eat a bigger portion but also is measurably worse than other oils in in just about every particle measure - the reason why is the fatty acids in butter are generally longer and thus require protein transport through your blood which is which is risk for "clogging"
from the fact that particle counts and ratios are better predictors, just use as little as possible and don't have metabolic syndrome or depression

Yeah people who say it's just the extraction method that makes them unhealthy are off their rocker. It's the sheer amount that matters and it's also in so many things that even if you aren't overtly adding sauces and using dips and dressings you're probably already getting more than enough. Plus people typically do add sauces that are 99% vegetable oil on top of it
eggs, oats, meat, dairy, basically anything that isn't seeds/nuts only has low amounts of omega 6. a notable exception is pork and chicken, but only because they're fed an unnatural diet of söy and corn. so lean chicken/pork is better than fatty. but raw seeds and nuts still contain of nutrients, so I'd only avoid high intake of nuts and seeds also very high in omega 6 just to keep total intake not too high.
the sheer amount is definitely a large problem. but things like the extraction processes, partial hydrogenation, and severe (repeated) heating are very significant factors as well. 50 g of omega 6 from raw seeds and nuts is probably less unhealthy than 30 g of omega 6 from stuff deep fried in old seed oil.
People just don't realize how much of it is absorbed when frying food especially at lower temperature.
