ohh okay, yeah i don't know enough about the yogurt making process to say if it's same or not, it might different somehow. but with kefir you buy the grains from somewhere online and put them in a jar with several cups of milk. leave it out on the counter overnight and it will thicken and eventually separate the whey from curds. you want to terminate the fermentation right as this separation begins, you'll see little pockets of whey at the bottom of the jar. if they separate completely then it's overfermented, which isn't a problem (just blend it up) but it won't be as creamy. but anyways, once it's done just pour it through a fine-mesh strainer over a large bowl. take a silicone spatula and swish the kefir back and forth in the strainer until it all goes through (the bottom of the strainer will also have some stuck to it, so scrape that off too at the end). the grains will be left in the strainer and you can put them back in the original jar and top with milk again for the next batch. the bowl will now have the kefir which you can stir up a bit and drink, or you can put it in a second day for another round of fermentation. this is called ripening the kefir and just makes it a bit more sour and probiotic. usually a second ferment happens much quicker, just a couple hours. pretty easy overall, takes like 10 mins maybe. lastly your kefir grains will grow in size as time goes on, so you can eventually split your grains and have multiple batches going at once or freeze some in a small amount of milk in case you ever mess up and kill them (difficult to do tbh)
