Belgians fry their potatoes in lard and they are the best fries in the world. I use olive oil to fry eggs, anything really as long as you're not using seed oils. Avocado oil, coconut oil, olive oil, butter, lard, tallow. Fried foods are not something you should be consuming on the regular any way
You really shouldn't be deep frying anything ever. For everything else I use oil or coconut oil. Smoke point is a meme. Several studies found olive oil is actually much more resistant to break down at high temperatures compared to sneedoils. Plus the during processing the temperatures sneedoils are exposed to is hundreds of degrees above the recommended "smoke point" which makes the toxic chemicals like aldehydes and transfat already present in the sneedoils to begin with. It's basically like saying we already made the poison for you so you can heat it to higher temperatures without making the poison yourself. Fricking israelite bastards. My Italian ex cooked everything in Extra Virgin Olive Oil and destroyed all my preconceived notions about it going "bitter" or whatever at high temperatures (complete BS, that's what they want you to think).
Just gotta be careful, most EVOO is "fake". Which isn't necessarily as big of a deal as it seems. There are mainly 2 ways to fake it: >Use pure sneed oil or EVOO cut with sneed oil and add green food coloring. This is relatively easy to detect and shouldn't happen unless you buy absolute garbage brands >They use Virgin Olive Oil that's not Extra Quality or they use oil from 1-2 years ago. This is quite common and there's nothing you can really do about it unless you buy it directly from the olive farmer.
You just need to keep the diminishing returns in mind. If it's too cheap it's most likely crap. If it's moderately expensive, it's OK, probably not real extra virgin but normal virgin olive oil that's cut a little bit with last year's harvest. If it's insanely expensive it'll most likely just be the same as the moderately expensive one, you just give more money to the Mafia
I usually just buy the California olive ranch. It's probably the only one you can buy with any degree of certainty about whats in it. The mob has polluted most of the things that come from italy

Butter,ghee,lard,beef tallow, chicken/duckfat, lard.
I save the bacon lard and mix it with ground beef and don’t have to use any additional fat to cook with.
