What are the downsides to an (almost) all stew diet.

They're more versatile than a crock pot. Pressure cookers can do a shit load of shit though. Dutch oven is a more versatile and quicker crockpot with better results

as someone who's been eating stews and soups for 6 months it's just way too filling. I'm sick of eating for the day after 1200 kcal even with oatmeal adding another 400-500 it's an absolute slog eat. Also I've noticed I can no longer taste salt which is a huge joy killer. Don't know if or how it's related.

I love stew, but I'm struggling to find a recipe for a tasty version that I can make quickly in my instapot. It's a pain in the ass finding recipes online, because every recipe gives a fricking life story before just getting to the actual ingredients and instructions. And almost every stew I've made lacks sufficient flavor.

There are ways to cheat by using pre bought stock and higher end cuts of meat but the whole point of a stew is slow cook cheap joint cuts of with alot of sinew/connective tissue until it becomes melt in your mouth delicious.
good stew is not easy or cheap, just 'throwing stuff into a crockpot' results in mush that tastes like the individual ingredients.
a good beef burgundy is great but it is not easy. if you're going to do easy/lazy things then just eat the ingredients. a crock pot doesn't do anything magical to them.

I don't use a crock pot for stew. The only thing I use it for is to make greek yogurt.
I just have a big ass stock pot that I make like 2 weeks worth of stew in. Never had a problem with the texture.

The only weird stuff that comes up is freezing can make the bone broth separate some, but you just give it a good stir once you re-heat it.
Beef Burguignon along with most other stews are simple to make. You just need to be patient and give them loads of time to stew.

Some people add stock but they are incorrect. It takes a while but I can get 6 delicious meals out of a pot. Nothing complicated about any of those steps unless you're a complete noob.

Most of what I cook now is in the instant pot. Beans, split pea soup, lentil curries, chili etc. I make it on Sunday and my wife and I eat it all week. Dirt cheap and good for you.
My stew sauce ends up being way too intense.
