Same with the ground beef and rice bowls. I cook them for a whole week at a time, with different mixed vegetables each week, but always including sauteed onions and garlic. I put beef bone broth in my rice as it's cooking.
Dinner at least six days a week is about a pound (cooked weight) of chicken thighs, 165g of large curd cottage cheese and a big bowl of spinach, sugar snap peas or snow peas, carrots and tomatoes.
Sometimes a pickle, which have effectively zero calories. Light balsamic dressing that is 15 calories for 30 ml for the veggies. BBQ sauce is 30 calories for 33 ml.
Overall it works out to around 1,100 calories, give or take depending on how much chicken.
I can eat the same meals basically indefinitely and not get tired of them. I think I've been eating this for dinner almost every day for a year or more at this point with not much variation. Sometimes I'll have pork loin instead, when its on sale for a lower price than the chicken thighs.
Sometimes I'll switch out cottage cheese for rice and beans, just rice, or roasted potatoes. I just make a big batch of everything on Sundays to get me through the week.
