      tofu is a sponge, and you need to dry out the sponge so it can absorbs whatever sauce you are cooking it into, so before anything, you need to drain out as much water as possible, i wrap tofu into papercloth and put weight on it, you can aussi microwave it a little and press the shit out of it

      i like to make mapo tofu, it's tofu in hot sauce with minced pork and i like it served over rice don't bother making the sauce from scatches ( you won't anyway) just buy a jar of lee kum kee mapo sauce

      Literally any spicy azn sauce
      Literally any azn rice wine
      Sesame oil
      Dry it well and throw in some meat and you're good

      Cornstarch is the secret. Toss those bad boys with cornstarch and whatever spices you want then fry it. Gives it that really delicious crispy exterior.
      My current recipe is:
      >smoked tofu
      >slice thin and toss with cornstarch and a 1/4 teaspoon of msg
      >fry in a pan like bacon until crispy
      >drizzle with a TINY amount of onions sauce and maple syrup, stir until dispersed, and then eat

      I use plenty of mayonnaise, ranch dressing, and red paper flakes. I like have tofu with a side of mashed potatoes and gravy.

        looks nasty as frick coming out, but the finished one she has looks like it has the right texture and consistency. I make most of my mashed potatoes from potato flakes + water + microwave. I imagine its the same shit if not soulless

      something which might be important is to dry it out properly, in a video i watched they put something like a cloth or kitchen paper on it and weight it down with a heavy object and let it drain for at least 15 to 30 minutes and than cut it in cubes and might than need to even go into the oven for a while so itt can dry out and firm up more, than let it properly marinate in your sauce of choice and than put it in the pan
