They tell you what heavyweights weigh in at. Stipe was as low as 229 while at/near the top. Werdum was like 238. Velasquez similar.
AFAIK "night of the fight" weights are speculative. But I can guarantee that heavyweights don't think about it. No reason to depress their weight
