Why does my lifting performance skyrocket when I eat junk food and suffer when I eat healthy food?
Isn't the opposite supposed to occur?

Define "junk food" and "healthy food".
Healthy = Meats, Poultry, Vegetables, Fruits, Slow digesting unprocessed or very little processed Carb sources
Junk = Heavily processed foods full of man-made preservatives and flavor enhancers
You're probably not eating enough carbs during your "healthy" phases. You sneed a lot of EXTRA energy to work out.
I notice the same with sex. If I'm too conscious about my diet and eat apples and shit I have low libido and subpar performance. When I eat tons of fried potatoes, fatty meats etc I'm an animal.
Pre workout daily snack: whole grain toast, butter, natural peanut butter, raw honey drizzle. Literally the perfect pre workout food, light on the stomach but packed with carbs and fat and a bit of protein too.
White grain toast isnt light on the stomach for me preworkout
Any kind of bread preworkout will bloat me
I need something like chocolate pre-workout as that doesn't do any bloating
Eat coffee beans covered in chocolate. That's what I plan to do before each workout this week.
Maybe add more salt?

I have noticed steroid users who eat tons of junk food get brutally strong as well
Seems like in terms of gains it goes
Steroids + Junk > Steroids + Healthy Food > Natty + Junk food > Natty Healthy Food
you think the per calorie amount of salt you add is even comparable to fast food? the double cheeseburger by mcdonalds has 2 grams of salt. just one little burger.
They really do add an insane amount of salt. My kids are really young but they will ask for French fries every once in awhile. I’ve tried making them in the air fryer and I’ll put a bunch of salt on it, and the taste comes no where close unless I shake the salt shaker like 5 times as much as what I would consider a ton of salt.
My pre workout is 5 cheeseburgers.

Presumably you're getting more calories from the junk food. Eat big to get big isn't a meme
NTA but have you actually ever counted your macros? You are simply not achieving your caloric intake or fat/carbs.
