Weight classes vary based on the org you’re competing in, but on the international level you’ll usually have an 80 kg, 90 kg, 105 kg, 125 kg, 140 kg, and super heavy weight. National and local level those classes will vary sone, but should be similar.

WSM events are extremely torso-dominant and suit people with these kinds of barrel physiques. If these guys were doing weighted pullups (arguably a more practical test of real strength than some of the stupid shit they do) first of all most of them would be hopeless and secondly you would see much bigger arms on them.

The worlds strongest man is just a name of a competition, he is not actually the strongest man. Strongman events are more strength endurance type lifts and displays.
Strength when it comes to lifting things implies the maximum weight one can lift for one rep. Absolute strength.
For example the squat and bench press world records, which are currently held by big black brutes, and a black brute also lifted 500kg in the deadlift in the gym for shits and giggles and didn't have a brain aneurism like Eddie Hall, which was filmed and is on youtube.
