1. Fiber
You're right, we can digest it but our gut bacteria can and the gut bacteria isn't well understood, but fiber seems to have a lot of benefits
2. Anti oxidants
There are a lot of different anti oxidants working in different ways, they help prevent aging, stress, disease, cancer. If you have too many of the same they'll instead cause the opposite effect.
3. Nutritional balance
When you eat too much of a certain nutrient, whether it's vitamins, minerals or protein it causes problems for the body. That applies to meat (protein) too. Too much protein helps you build muscle by overstimulating IGF1, MTOR and GH, which also ages you, causes disease and increases cancer risk.
Plants in general have better nutritional balances and fiber helps to slow down the uptake of the nutrients so the body doesn't get overwhelmed in the same way.

Frick vegans and everything, but why the hell would you "need" to eat them to fricking eat them? What kind of fussy baby doesn't like any vegetables. Who the frick wouldn't want some mashed potatoes with their steak, some bell pepper and onions in their stir fry, some beans in their chilli, some lettuce on their burger... Just eat what you like when it comes to fruits/veg, and pop a multivitamin to hedge your bets if you're worried.

i always feel way better when i have some lamb instead of pork or beef. the local butcher closed down last year and now i have to buy my meat either an hour away from me, or get it at the local grocery store that doesn't routinely stock lamb
Lamb tends to have a better diet since sheep are a hardier animal and they can be left out to do their own thing. Feedlot pork is the worst meat you can get, they're basically fed plastic, feedlot beef is a little better but they're way over medicated.

Veggies and meat are largely complementary rather than competing in the same nutrient needs, most of the bioavailability problems with veggies apply to beta carotene (which you don't need a lot of anyway) and iron as well as their protein content. Just eat both no?
