I usually eat the wild rice blends which have higher protien than potatoes anyway. I guess if I'm looking for potassium it's the better way to go, but potatoes always feel dense and make me feel lethargic, no idea why. Ideal meal for me is fish/chicken, rice, and some mix of veggies.

Eggs have all the micros except vitamin C, which are in potatoes or sweet potatoes. Eggs are all fat and protein and potatoes are all sugar/starch/fibre. Maybe there’s some mineral you’d be missing but I dont think you could do better
