not true imo, despite it's "clinically shown" status. i see no resounding proof that things like dietary fats/lard/meat result in such substances accumulating in the arteries/heart. anecdotally, i didn't commit to such a diet and have had improvements. doesn't mean my experience will be the same experience for everyone, though.
you want to focus on your arterial health. this can mean many things depending on your current state (i encourage you to dyor regarding this), but for me it meant reducing arterial stiffness by not smoking, eating foods high in nitric oxides at least once per day, and starting out my runs at a slower pace before getting to my higher sustained paces. the last one in particular had a strong effect on chest pains (angina) i felt while starting cardio - i wasn't giving my arteries enough time to dilate properly before making them work so hard. i believe rolling 48 hour fasts help too, i tend to do it once every two weeks or so. during the refueling/refeeding meal in between the fasts, i try to eat low carb in order to maximize the benefits insulin sensitivity.
from what i understand regarding this, arterial stiffness leads to plaque buildup and eventual arterial stenosis that deprives the cardiomyocyte (heart cells) of oxygen. so you want to keep them from getting stiff while younger so you don't have to deal with calcified arteries when you're older. speaking of calcium, you may find this study interesting:

I'm not so sure of that conclusion, largely because many plants are in fact inflammatory. Furthermore, just because there's an abundance of chloesterol/saturated fat in your diet/blood doesn't mean that it is the reason plaque consisting of general cellular debree is accumulating. I totally do believe that some nutrients from certain types of plants could help reverse damage or treat cell walls that are becoming stiff.
I don't feel comfortable commenting much on just how much calcemic levels effect the heart because I don't even understand the role of everything in my pic rel (aside from broadly knowing of the general exchange of intracellular magnesium, calcium, sodium, and potassium). I do recall reading, however, that you should not take calcium supplements unless specifically instructed to by a cardiologist/doctor because of what you said. I've also read that forms of vitamin K (mk7) in combination with D + a long-chain fat-rich diet can potentially help create an environment that supports decalcification.

I believe repeated stress causes the buildup to occur, it's like a layer of sediment that is healed over (and over and over). That's why many people nowadays focus on lowering inflammation when possible by avoiding foods that cause it. It's also caused/accelerated by various stuff that gets into your blood that shouldn't really be there, like particles from smoke/vape juices/alcohol/who knows what else.
Anywho, I think that a low fat vegan diet may help in such cases because there is just less in the blood to end up getting lodged in place since you are basically fasting anyway. So more suitable as a last measure. I personally wouldn't recommend anyone try to adapt to a lifestyle of being fasted/vegan as often as possible unless you're trying to get rid of cancer, but I'm not a doctor either.

You are almost certainly deficient in this vitamin if you live in a western country. Its role is to activate enzymes that deposit calcium into your bones. With this deficiency, you will instead get calcificiation of other tissues including blood vessels and heart valves. K2 deficiency has already been linked with cardiovascular causes of death (especially when the deficient patient is also taking calcium supplements).
