I've only ever had goose liver which was delicious and creamy. Other organ meats just stir fry with some veggies and make it spicy. The only organ I've had that I wouldn't eat again is brain.

Second: take some flour and mix in salt and pepper, roll the liver in the flower before frying. 4 hours before that, cut up like 2kg of onions into rings and put them in a pot over low heat with a lid on it, then let them slowly caramelize. One you start frying the liver, take the lid off and add cream. Once you're done frying the liver, deglaze the plan with the cream/onion sauce and pour it over the liver.
