If I eat egg, chips and a slice of butter bread for my OMAD every day this year, AIGMI? I honestly think I can do this without getting sick of it. I know there's carbs involved, but is that really a deal-breaker? Planning on dropping 14lbs as quickly as possible.

Bro, if you're doing OMAD, you're most probably losing weight. If you like bread and it doesn't cause a considerable damage (not that you can know if it's doing it in the long term, though), just keep at it. Try to eat only whole grain, at least.
You're going to be severely deficient in calories, and also in protein and micronutrients, if you only eat what's on that fricking plate. You'd have to eat like twelve eggs with that to have a chance to not ruin your body.
I recently introduced more carbs to my breakfast, paradoxically it allows me to keep a higher work-rate and pace for longer before the next meal (and last, I’m on a 1600 cut). Stole the idea from of the IST Black folk

low carb is a meme anon, just make sure you're getting the right protein and calories for your goals. But you'll probably want to throw in a multivitamen or those reds/greens supplements, not a lot of micronutrients in all that.
