City is more dangerous than highway. Most accidents happen at intersections.
A 250cc bike can still go 170+ kmph, while lane splitting and zooming around. So don't let the small engine give you false confidence. It'll just keep you from lowsiding in corners from bad throttle control.
Anyway, showering at the gym would be ideal. Bring a backpack or get a tailbag.
You don't wanna get your jacket all smelly.
Maybe just wear jeans, spine protector, gloves and helmet on gym days if you can't shower there.

If your bike doesn't have ABS then you need to practice braking. Motorcycle braking is very skill dependent, and most cars will outbrake you.

i prefer to ride w my gear. i'll wear my gym clothes under jeans and jacket and wear a backpack with change of clothes and anything else i need.
in summer i skip the leathers and pants and ride in my shorts to the gym.
you'll learn you pretty much always have a backpack on unless you're riding a harley cruiser, which you're not, cuz none of them are IST

I have a bike that I commute on in street clothes. My whole commute is less than 50 mph and I live in texas so I'm willing to tolerate the risk. Do wear a full face helmet though, you don't want a skin graft on your face.
Gloves are just as important as helmet bro. And honestly it's not THAT hard to just throw on a jacket. As a man you should be wearing good quality closed toed shoes regardless.
The only thing I excuse not wearing all the time is pants, because that's a legit hassle.

On the third time I crashed my second bike with my defensive riding, I sold all my bikes and bought a SUV. No motorcycle ever since. But I’m so fricking lucky to be healthy with proper bones, muscles, tendons after crashing three times
ride with all your protective gear, taking time to put on leathers/helmet is better than losing months of training because you needed a skin graft or broke your leg
if you have saddlebags/luggage rack, just keep your gym bag in/on them. before I had saddlebags on my first bike, i just condensed my gym bag into a backpack

Full gear with a backpack/rear bag with gym gear. I never bring shoes and lift in shoes.
Pro tip riding your bike to and from the gym might not be good. After a big leg session it is not enjoyable to be in riding position
