I’ve been traveling in Eastern Europe and the Balkans for the past few months — most apartments do not have a dishwasher or microwave.

I haven't done my dishes in a month.
Finally emptied my dishwasher and used the last clean fork though, so it will probably happen this week.

that's 4 or 5 things to clean plus they are big so it's much easier.

Instant pot. I don't even wash it. Add ingredients, heat it up for 20 to 40 minutes. Done.

The first few times you cook a recipe, yeah, you'll probably have more dishes than you want to clean. But as you do it again and again, you'll find out that you don't need as many dishes as you thought you needed.

    Tips for new cooks:
    >Mise en place: prep all your ingredients before you even turn on the stove. This way you don't have to rush to do things as the stove burns your meal.
    >Clean as you go: one of the easiest ways to get ahead of dishes like OP's pic. Done cutting shit up? Wash your cutting board and knife. Dumped in sauce into the pan? Clean the bowl. Finished your recipe? Get it put away in a container and clean the pan before your meal residue cools and hardens
    >find ways to reduce/reuse bowls: You don't need 5 bowls for 5 ingredients if the ingredients can all be combined. Same with sauces. As long as your bowl hasn't had anything that can cause cross-contamination(IE: raw meat), you can reuse it however many times you like before cleaning.
    >Cook at-least 4 portions per recipe: meals for 2 are nice, but if you have to cook them 5 times a week you'll get sick of it fast. aim for recipes that produce 4-8 servings that you can use as leftovers.
    >Stick to simpler recipes for a better time: are ground meat tacos better than fresh gnocchi with basil pesto? No. Is it easier, faster, and produces larger servings with less cleanup? Yes.
