The main problem with liver is that it's TOO nutritious: you can overdose on vitamin A/heme iron if you eat it with any amount of regularity. Diet should be intuitive, and you should be asking yourself, "how often would my ancestors have access to this?". Liver is an organ meat, which animals possess only one of, so figure it out. Eating more than one a week is too much.

I buy 1kg for 3 bucks and that's grassfed, not grassfed is like 2 bucks, not sure what that guy is about

I think it's better just seared in butter like you would a steak. I've done it dipped in flour and cooked with onions and didn't like it as much

Try patè or liverwurst. Alternatively pig or chicken liver have much more milder flavors. If texture is rubbery you probably overcooked it
