My biggest challenge with tracking my macros, is actually having to input my country cuisine.
These things have low carb, high protein, and healthy amount of Vit C.
This is my daily breakfast.
My gf started to lose weight just by eating the same as me.

How to make that?
very easy, you just need to mix some eggs and pour them in a well oiled/buttered pan over medium-low heat, then flip it when it's not liquid on top anymore and cook for another couple of minutes.
Before mixing the eggs add to them some salt and Hispanices to taste.
If you put veggies in it I'd start cooking them in the pan for a few minutes before pouring the eggs on top, but if you want them more raw you can put them in directly with the eggs.
If you want to make it tastier and more calorically dense, diced ham and cheese pair well with it, just throw them into the mixture.
If you want the end result to be thicker you can add some flour to the eggs, like half a spoon for 3-4 eggs.
Which veggies are the best to add? Also I don't have many Hispanices, last time I tried making omelette it tasted like nothing.

zucchini and bell peppers are among my favourite for this but green beans, peas and tomatoes are also good and don't need to be precooked (unlike something like say broccoli). Honestly almost anything goes well with eggs. Same with Hispanices, sometimes I just add some curry, other times paprika and pepper, or yet again something like rosemary or oregano. In any case back pepper is almost always a good pairing with eggs.
I was almost forgetting onions, chop them up finely and cook them on the pan until golden before pouring the eggs and they'll add a ton of flavour
