I usually write my recipes on the fly and they typically turn out well. If you're gonna use protein powder, I'd suggest not using a premix. King Arthur's website has a good base brownie recipe, and if you substitute the cocoa powder for protein powder, you should achieve similar results with an improved macro profile. I'd suggest learning baker's percentages and the effect of protein on rheological and structural properties of baked goods; it's how I found out gelatin + veggie oil = protein butter for cake.
You make it sound all complicated. People been making cake with jello mixes for a long time. I like to cook, but I think the box brownie mix tastes better than my homemade. I think that partially because store bought cocoa powder is trash.
Jello mix is modified starch usually, not gelatin. What cocoa powder are you using for it to taste like trash? I don't typically use Nestle - if I use powder at all (and that's what's usually at the store). Good ingredients are the foundation for good food.
If you're gonna use a premix, you're gonna mess up its structure and cooking properties if you just add protein powder without consideration for the other ingredients. Post instructions, I'll see what I can do.
My mom always cooked with Hershey cocoa powder. I've found that has a burned taste. Nestle I do think a little better, but it is still pretty low quality.
I think KA has a post on cocoa types and sources. Long and short: match Dutch cocoa to baking powder and natural cocoa to baking soda, lest you get bitter or sour aftertastes.
Also, good chocolate allows for a lot of flavor combinations.
