Most people will hit the barbell goblet squat variant aka the front squats for two plates with ease. And come on man, a 25kg deadlift sounds sad, no matter what your handicap is, your legs are big and strong muscles.
I mostly use mine for biceps and delts. One arm rows with all the weight I own really works great for rear delts and lats.

Honestly I'd skip the dumbbells if I had to do it all over again. Having a place to do chin-ups/pull-ups and dips is way more important. You can isolate biceps and lats with something as simple as rocks in a pillow case. Bulgarian split squats or sprints is enough for the lower body. That is unless your goal is to look like a roided bodybuilder. I think people overthink exercise too much when the basics will put you in the upper 10% of the population and what you really lack is consistency.

You ever hear of that rat experiment where they put rats in a sterile, simple, boring environment and their brains atrophied and another group of rats is a highly stimulating environment with all kinds of stuff? Well, which environment would you rather be in?
Minimalism sounds cool like I got all these gains and I only did pullups and pushups every day. It also makes it sound like you had to put in less work or thought into it. The fact is, the more resources you have available to you the more interested you'll be in it, the better off you'll be long term. It's something you'll stick to.
I realize you can do a lot of varied stuff with dumbbells, especially if you can gradually load them to high weights. At the end of the day, the more resources at your disposal the better.
Another analogy that springs to mind is schoolchildren. You give schoolchildren one history textbook, one geography textbook, etc. even if they are very good books and technically give more than enough for an exam, that's not how kids learn about stuff the best at all. They have to have multiple streams of information for the best results.
